Chef and Maître Chocolatier Ernst Knam - born in 1963, in Tettnang (on Lake Constance), as a child he dreams of becoming an ornithologist, but his mother convinces him to become a pastry chef: "So we will have cake every Sunday". He attends a pastry school, has experience in various starred restaurants in the world, arrives in Milano in 1989 and works as head pastry chef in the restaurant of Gualtiero Marchesi, in Via Bovesin della Riva. In 1992 he opened his shop in via Anfossi 10, L'Antica Arte del Dolce, which in 2015 changed its name to Pasticceria Ernst Knam. Creative, lover of experimentation and surprising combinations of taste, over the years he won many competitions in the field of pastry and cooking. Author of numerous books on the art of pastry, since 2012 he is also a television face beloved by the public: "King of chocolate", "Bake Off Italia", followed by Dolce Quiz and the column La Dolceria, a window on sweets aired every Friday within the historic program of Rai 2 "I Fatti Vostri" together with Frau Knam.
